INGREDIENTS

  • Lucky Star Pilchards in Tomato Sauce 1 can (400 g)
  • Medium onion, chopped 1
  • Red, green & yellow peppers, chopped 1 handful
  • Chopped tomatoes 1 can (400 g)
  • Cooking oil 3 Tbsp (45 ml)
  • Garlic, crushed 1 tsp
  • Frozen mixed vegetables 1 cup (250 ml)
  • Paprika 1 Tbsp (15 ml)Paprika 1 Tbsp (15 ml)
  • Mild curry powder 1 Tbsp (15 ml)
  • Salt and pepper to taste

METHOD

  1. In a medium saucepan heat the oil and fry the onion until translucent.
  2. Add peppers, garlic and cook for about 3 - 5 minutes.
  3. Add curry powder and paprika and cook for about 5 minutes, stirring occasionally, then add the tomatoes and simmer with the lid on for about 10 minutes.
  4. Remove the lid and add frozen vegetables and cook until they are tender (about 5 minutes).
  5. Add the fish, stirring gently until well combined.
  6. Allow to simmer for a few minutes.
  7. SERVING SUGGESTION
  8. Serve with rice of your choice.
  9. This dish goes well with a delicious coleslaw or Lucky Star Chakalaka.
