INGREDIENTS

  • 410 g tin Lucky Star Mild & Spicy Chakalaka
  • 2 cups (500 ml) Uncooked long-grain rice
  • 2 Tbsp (30 ml) vegetable oil
  • 2 medium onions, chopped
  • 2 tsp (10 ml) mild curry powder
  • 2 tsp (10 ml) paprika
  • 2 garlic cloves, crushed
  • 1 – 2 red chillies, chopped
  • 2 Tbsp (30 ml) tomato paste
  • 4 medium tomatoes, grated
  • ½ cup (125 ml) green peas
  • Fresh coriander or parsley to garnish
  • Salt and black pepper, to taste

METHOD

  1. Heat the oil in a large pot and sauté the onion for 5 minutes.
  2. Then add the curry powder, garlic and chillies and cook for 3 minutes. Add the tomato paste and grated tomatoes and cook for about 5 minutes (uncovered).
  3. Add the rice and 1,5 litres of water, close the lid and cook for 15 minutes, stirring every 5 minutes to prevent burning from the bottom.
  4. Add the Chakalaka and frozen mixed vegetables and cook for 10 minutes, stirring occasionally.
  5. Season to taste with salt and pepper.
