Lucky Star Beans on French Toast

INGREDIENTS

  • Lucky Star Baked Beans in Tomato Sauce 1 can (410 g)
  • Butter 2 Tbsp
  • Spring onion whites 1 cup
  • Oregano 2 tsp
  • Mayonnaise 2 Tbsp (30 ml)
  • Medium green, red and yellow peppers 1⁄2 each
  • Garlic 1 1⁄2 Tbsp
  • Atchar 2 Tbsp (30 ml)
  • Grated Mozzarella cheese to garnish (optional)
  • FRENCH TOAST
  • Thick slices of bread 6
  • Eggs 2
  • Milk cup
  • Chopped chives 1 tsp
  • Salt and pepper to taste

METHOD

  1. TOPPING:
  2. Finely chop spring onions and peppers and set aside
  3. In a large frying pan, melt the butter over a low heat.
  4. Then add the peppers and spring onions and fry for 3 minutes until translucent.
  5. Add the garlic, oregano and baked beans. Mix together and cook for another 3 minutes.
  6. Allow to cool, then add the mayonnaise and atchar.
  7. Set aside and start preparing the french toast.
  8. FRENCH TOAST:
  9. Beat together the eggs and milk. Add the chopped chives and seasoning.
  10. Heat a lightly oiled griddle or frying pan over medium-high heat.
  11. Dunk each slice of bread in the egg mixture, soaking both sides.
  12. Place in a pan and cook on both sides until golden.
  13. TO ASSEMBLE:
  14. Serve each french toast slice topped with the beans mixture and add the grated mozzarella cheese if you’re using it. Enjoy!
