INGREDIENTS

  • Lucky Star Pilchards in Sweet Chilli Sauce 1 can (400 g)
  • Tomato puree 1⁄4 cup (60 ml)
  • Fresh basil, chopped 2 Tbsp (30 ml)
  • 15 cm ready-made pizza bases 4
  • Cheddar cheese, grated 1 cup (250 ml)
  • Mozzarella cheese, grated 1 cup (250 ml)
  • Cherry tomatoes, halved 120 g
  • Medium green pepper, thinly sliced 1
  • Medium red pepper, thinly sliced 1
  • Medium yellow pepper, thinly sliced 1
  • Fresh basil or rocket 1 bunch for garnish

METHOD

  1. Preheat the oven to 200°C.
  2. Open the pilchards in half lengthwise and set aside.
  3. In a medium bowl mix the tomato puree with the pilchard sauce and add chopped basil.
  4. Mix the cheddar and mozzarella cheese together and sprinkle half over the tomato sauce base.
  5. Arrange tomatoes, halved pilchards and sliced mixed peppers over cheese and sprinkle with remaining cheese.
  6. Place pizzas onto a lightly greased oven tray and bake in a preheated oven for about 15 minutes or until the cheese is golden and bubbling.
  7. Top with rocket or basil leaves and enjoy!
