INGREDIENTS

  • 200g mash potato
  • 1 tsp salt and pepper
  • ½ white onion finely chopped
  • 2 cans sardines peri peri flavour
  • ½ tsp cumin
  • ½ tsp paprika
  • 1 cup bread crumbs

METHOD

  1. Fry onions in oil until soft. Add paprika, cumin and stir gently until fragrant and then add your sardines with half of the brine/sauce. Cook on medium heat until the sauce has evaporate d but with sardines still moist (5-8 minutes) set aside until cool.
  2. In a separate bowl mix your mash potato and sardine mixture gently, add in your breadcrumbs, chopped coriander and mix well. Place in the fridge for 30 minutes to set.
  3. Take your mixture out of the fridge and shape it into your desired burger shape using a ring/cutter or your hands. Fry this for 3-4 minutes on each side and finish it of in the oven for 10 minutes on 180 degrees.

NOTES

Burger roll.

Mayo mixed with smoked paprika.
