Peri-Peri Sardine Ala King

INGREDIENTS

  • 2 cans peri per sardines
  • 5 Tbsp unsalted butter
  • ½ white onion finely chopped
  • 200g button mushrooms (sliced)
  • 2 tsp fresh thyme or dry
  • 3 cloves garlic (minced)
  • White sauce (with fish stock or chicken stock Instead of milk)
  • Red, green and yellow pepper sliced
  • Fresh parsley chopped
  • Salt & pepper to taste

METHOD

  1. On medium heat pan drizzle some oil & add 3 Tbsp of butter. Once the butter has melted add onion, cook for 4-5 minutes and then add mushrooms, thyme. Allow this to cook for 4-5 minutes and then add your 1 tsp garlic, a pinch of salt and mix well.
  2. Add your peppers in the mixture and cook for 5minutes and then add your peri peri sardines gently with the brine on the side.
  3. Take your white sauce and loosen it up with some of the sardine brine and transfer the mixture into your pot with mushrooms and peppers. Mix gently.
  4. Gradually pour in your 150ml of cream and stir well.
  5. Bring the sauce to simmer, cook and stir for about 2 minutes or until the sauce thickens and bubbles appear.
  6. Add chopped parsley and serve with basmati rice.
