INGREDIENTS

  • 2 Tbsp cooking oil
  • 2 Tbsp butter
  • 1 large onion
  • Tikka paste
  • 1 tin tomato
  • 1 ¼ cup heavy cream
  • Peri peri sardines 2 tins
  • Fresh coriander handful finely chopped

METHOD

  1. Separate your sardines from brine and set aside.
  2. Medium heat pan, melt butter and sauté onions until soft. Add your tikka paste, stir for 2minutes then add your tin tomatoes and allow to simmer for 5min. (Stir occasionally until sauce thickens)
  3. Stir in cream until incorporated.
  4. Add your fried sardines along with the brine and cook for 5 minutes. Add a bit of water if the sauce is too thick, chop in some fresh coriander and served with basmati rice or naan bread.
