FRIED CHAKALAKA CHICKEN WINGS

INGREDIENTS

  • 1 kg Chicken wings (cut into two)
  • 1 Tbsp (15 ml) chicken spice
  • Vegetable oil for deep frying
  • 1 onion, finely chopped
  • 2 carrots, peeled and diced
  • 1 celery, chopped
  • 1 garlic clove, crushed
  • 1 tsp (5 ml) paprika
  • 1 tsp (5 ml) dried chilli flakes
  • 4 medium tomatoes, chopped or grated
  • 1 Tbsp (15 ml) tomato paste
  • 410 g tin Lucky Star Mild & Spicy Chakalaka
  • Salt and black pepper, to taste

METHOD

  1. In a medium bowl, rub the chicken wings with spice and set aside. In a medium saucepan, heat enough oil and deep-fry the wings for 4 – 6 minutes or until crispy, drain on a kitchen paper.
  2. In a large pot add 2 Tbsp of vegetable oil and sauté the onion, carrots, celery, garlic, chilli flakes and paprika together for 5 minutes, until the onions have gone glassy.
  3. Add the tomatoes, tomato paste, Chakalaka and chicken wing and cook for 20 minutes. Serve as a snack or as a main with any starch of your choice.
