Tuna Casserole


  • 2 x 170g Lucky Star Tuna
  • 1 x packet penne pasta
  • 1 x 425g tin of sweet corn
  • 1 x onion, finely chopped
  • 1 x packet of fresh mushrooms
  • 1 x red pepper, chopped
  • 1 x tin of mushroom soup
  • 1 x teaspoon of crushed garlic
  • Cooking oil
  • Salt and Pepper


Add 4 cups of water to a pot and bring to a boil
Add the pasta and let boil for 10 minutes until soft, remove from heat and let cool
On medium heat, fry the onion, garlic and peppers until soft
Add the fresh mushrooms and sweet corn and mix
Add the drained Lucky Star Tuna and allow to simmer until soft
Add seasoning and mushroom soup and allow to simmer for a further 5 minutes
Add to the penne pasta and serve while hot
