Summer Sardine Salad Snack

Ingredients

  • 120g can Lucky Star Sardines
  • 4 large lettuce leaves
  • 1 large carrot, sliced into matchsticks
  • 1 small red pepper, sliced into strips
  • ¼ cucumber, sliced into matchsticks
  • milled black pepper
 Spread

  • 15ml (1 Tbsp) chopped fresh parsley
  • 15ml (1 Tbsp) chopped fresh mint
  • 125ml (1/2 cup) fat-free smooth cottage cheese
  • milled black pepper

Method

Spread: Mix together all the ingredients. Set aside.

Drain the sardines and break each sardine in half.

Dollop 15ml (1 Tbsp) of the spread in the middle of each lettuce leaf. Pile on strips of carrot, red pepper and cucumber. Top with sardine halves and season with a little pepper.
