Mexican Pilchard Salad


400g can Lucky star pilchards in tomato or chilli sauce
2 onions finely chopped
2 tomatoes finely chopped
1 green pepper finely chopped
2 chillies finely chopped
3 TSP sunflower oil
3 TSP vinegar
salt and pepper to taste


Mix all ingredients together excluding the pilchards
Season to taste
Add the pilchards and fold the salsa over the mixture
Allow to stand in the refrigerator for at least 30 minutes before serving

Best enjoyed with

Roast potatoes, Jasmine rice and french bread
