Maize Meal Pie With Spicy Pilchards


3 cups water
1 teaspoon salt
1 cup maize meal
2 tablespoons butter or margarine
½ cup grated cheddar cheese
2 egg yolks

400g can Lucky Star Pilchards in Chilli
4 onions, sliced
oil for frying
2 tablespoons chopped fresh herbs, or 1 teaspoon dried mixed herbs
salt and ground black pepper
4 tomatoes, thinly sliced


Heat the oven to 200°C. Grease a 22cm pie plate.

TO MAKE THE PIE CRUST: bring the water and salt to the boil in a medium, deep saucepan. Stir in the maize meal and cook over high heat, stirring constantly, for about 5 minutes until it thickens.

Remove from the heat and mix in the butter or margarine, cheese and egg yolks.

Spoon the maize meal into the prepared pie plate to line it neatly, and bake uncovered for about 40 minutes until crisp and golden.

TO MAKE THE FILLING: while the pie crust is baking, drain the pilchards and separate the fillets. Keep the sauce. Brown the onion in a little oil in a frying pan. Add the sauce from the can of pilchards, and season with mixed herbs, salt and pepper.

Spread the onion onto the warm pie crust base and top with pilchard fillets and sliced tomato. Serve at room temperature with a salad.
