Baked Fish Cakes

Ingredients

400g can Lucky Star minced Pilchards in tomato sauce
1 small onion finely chopped
1 TSP Fresh parsley chopped
2 slices of brown bread crumbed
l egg beaten
pinch of black pepper and salt

Method

Preheat oven to 150 degrees
Place all the ingredients in a large bowl and mix well
Use any large baking tray and either coat bottom with Olive Oil or Spray and Cook
Spoon large individual patties of the fish mixture onto the tray making +/- 12 fish cakes Bake in oven for 10-15 minutes and turn patties over and bake for another 5-10 minutes. Serve with a refreshing green salad
