Lucky Star Pilchard and Corn Muffin


1 cup yellow cornmeal
½ cup cake flour
½ Tbsp. baking soda
1 cup milk
1 egg
¼ cup vegetable oil
1 can cream style corn
1 Tbsp. fresh chilli, finely chopped     
1 x 400g tin Lucky Star Pilchards, drained Salt and pepper to taste.


  1. Preheat the oven to 180°C and grease a 12 muffin cup tin.
  2. In a large bowl combine together the cornmeal, flour, baking soda. In another bowl mix the milk, egg and oil, then add the corn, chilli, salt and pepper to taste.
  3. Stir this mixture into the flour mixture. Add the Lucky Star Pilchards and stir.
  4. Place an even amount of batter in each muffin cup and bake for about 20 minutes, or until a skewer pricked into the middle comes out clean.


Makes 12 muffins
