Lucky Star Pilchard and Corn Muffin
1 cup yellow cornmeal
½ cup cake flour
½ Tbsp. baking soda
1 cup milk
¼ cup vegetable oil
1 can cream style corn
1 Tbsp. fresh chilli, finely chopped
1 x 400g tin Lucky Star Pilchards, drained Salt and pepper to taste.
- Preheat the oven to 180°C and grease a 12 muffin cup tin.
- In a large bowl combine together the cornmeal, flour, baking soda. In another bowl mix the milk, egg and oil, then add the corn, chilli, salt and pepper to taste.
- Stir this mixture into the flour mixture. Add the Lucky Star Pilchards and stir.
- Place an even amount of batter in each muffin cup and bake for about 20 minutes, or until a skewer pricked into the middle comes out clean.
Makes 12 muffins
