Lucky Star Mussel Chowder
2 x 85g tins Lucky Star Smoked Mussels
2 cups potatoes cubed
2 large leeks chopped
2 cloves garlic crushed
2 medium carrots cut in half lengthways and sliced
2 cups stock
2 cups cream
- In a medium pot, fry off the leeks and garlic until soft, then add the potato and carrots and cook until tender.
- Add the stock and cook until potatoes are almost soft.
- Add the Lucky Star Smoked Mussels and cook for a further 5 min, add cream and reduce.
- Season to taste.
